Rosettes

This is the only recipe that requires fancy tools, specifically a rosette iron. The whole thing looks fancy, as do the resulting feather-light cookies, but they’re actually quite simple to make. Great cookies to impress a crowd. A light dusting of powdered sugar is a great addition.

Yields: 16 Rosettes

Ingredients:

  • 2 whole eggs

  • 1 cup of milk

  • 1 tablespoon of sugar

  • 1 cup of all-purpose flour

  • Corn oil for frying

  • Powdered sugar for decoration

Instructions:

  1. In a bowl, combine the whole eggs and milk.

  2. Add the sugar and all-purpose flour.

  3. Whisk the mixture by hand until all the ingredients are well incorporated. Make sure there are no lumps in the batter.

  4. Heat enough corn oil in a deep pan.

  5. Submerge the rosette mold into the hot oil and let it heat up.

  6. Dip the heated mold into the batter, ensuring it gets coated, then place it back into the hot oil.

  7. Wait until the rosette is golden, crispy, and releases from the mold.

  8. Let the rosettes rest on paper towels to remove excess oil.

  9. Decorate the rosettes with powdered sugar before serving.
