This is the only recipe that requires fancy tools, specifically a rosette iron. The whole thing looks fancy, as do the resulting feather-light cookies, but they’re actually quite simple to make. Great cookies to impress a crowd. A light dusting of powdered sugar is a great addition.
Yields: 16 Rosettes
Ingredients:
-
2 whole eggs
-
1 cup of milk
-
1 tablespoon of sugar
-
1 cup of all-purpose flour
-
Corn oil for frying
-
Powdered sugar for decoration
Instructions:
-
In a bowl, combine the whole eggs and milk.
-
Add the sugar and all-purpose flour.
-
Whisk the mixture by hand until all the ingredients are well incorporated. Make sure there are no lumps in the batter.
-
Heat enough corn oil in a deep pan.
-
Submerge the rosette mold into the hot oil and let it heat up.
-
Dip the heated mold into the batter, ensuring it gets coated, then place it back into the hot oil.
-
Wait until the rosette is golden, crispy, and releases from the mold.
-
Let the rosettes rest on paper towels to remove excess oil.
-
Decorate the rosettes with powdered sugar before serving.
