This past Tuesday, Isabel attended the Academy of Chocolate awards ceremony in London! We received a Bronze medal for what has turned out to be last year's awards darling: our 70% Belize dark chocolate ganache made with Dandelion Chocolate's delicious Maya Mountain chocolate. This rich ganache, with its notes of tropical fruits, has become a best-seller at the store and was awarded three other awards last year.
It was lovely to attend the ceremony and share with other chocolate makers and chocolatiers from around the world. From conversations, we gathered a few trends for this coming year:

- Sky-high cacao prices are still a strain on the fine chocolate industry and educating consumers about the importance of paying top price for quality and sustainability remains one of the industry's priorities
- Chocolate bars with fun and unexpected inclusions continue to rise among micro- and medium- sized chocolate makers
- China has arrived: Chinese chocolate makers and cacao growers are making a splash in the fine chocolate industry for the first time
