Fortune Cookies

These are super fun to do, but you have to move quickly! Adding personalized messages to each cookie gives them a special touch. Fun fact: Isabel served fortune cookies at her wedding instead of wedding cake.

Ingredients

  • 2 large egg whites

  • ½ teaspoon vanilla extract

  • ½ cup all-purpose flour

  • ½ cup sugar

  • 1 pinch salt

  • 3 tablespoons water


 

Preparation

  • 1. Preheat the oven to 425°F (220°C).

  • 2. In a medium bowl, whisk together the egg whites and vanilla extract until frothy (about 1 minute).

  • 3. Sift the flour, sugar, and salt into the bowl using a fine-mesh sieve.

  • 4. Gently fold the dry ingredients into the egg white mixture with a spatula until a paste forms.

  • 5. Add the water, 1 tablespoon at a time, until the batter is smooth and falls in ribbons when lifted with a spatula.

  • 6. Place 1 tablespoon of batter onto a Silpat-lined baking sheet and spread it into a 3-inch (7 cm) circle.

  • 7. Repeat with another tablespoon of batter, leaving space between the circles (only bake two at a time).

  • 8. Bake for 8 minutes or until the edges turn golden brown.

  • 9. Quickly remove the cookies with a spatula. Place a fortune paper in the center, fold the cookie in half, then shape it over the edge of a cup to form the fortune cookie shape. Place the shaped cookies in a mini muffin tin to cool and hold their shape. Repeat the process with the remaining batter.
