Ahead of the trend: chocolate and cheese pairing in 2015

Lately, we have seen a rise in unusual chocolate pairings, including many with different types of cheeses. This trend is very 2019, but we were doing it back in 2015 for events at our commissary kitchen before opening Garcia Nevett chocolate shop in South Miami.

As chocolatiers, we love pairing our bonbons with wines and liquors. The idea of doing a cheese pairing was inspired by our favored combination of sweet and savory flavors. We ended up pairing our Anis y Papelon bonbon, which is based on a Venezuela pastry that is usually topped with salty cheese, with Cypress Grove's Midnight Moon. This creamy goat cheese is sweet, but has little nuggets of crunchy saltiness from protein crystals. The result was a creamy combo of fennel seeds, dark chocolate and tangy-sweet cheese that was truly memorable.
