The important work of rescuing heirloom cacaos for the future of fine chocolate

For the past 5 years, Susana and I have attended the Fine Chocolate Industry Association's winter or summer events. These events are a great opportunity to connect with others in our industry and keep up-to-date with news and trends.

One of the most important parts at each of these events is the presentation of a new batch of heirloom cacaos by the Heirloom Cacao Preservation Fund. Each year, they present new cacaos that have been recognized as exceptional by experts due to their DNA and the exquisite chocolate that can be made from them.

We enjoy the talk and will continue to attend and expand our knowledge of cacao and chocolates, so we can continue to bring you the best chocolates in Miami. Most of our chocolates are made with Venezuelan cacao, but we also use some Peruvian chocolate. It is very important for us to bring you delicious chocolates for a unique experience in Miami or wherever you are.
